APRIL IS THE TIME FOR WILD GARLIC

Our wild garlic pesto recipe to round off delicious dishes or to enjoy simply on its own! Ingredients (for 4 portions):

500 g wild garlic
100 g Parmesan cheese (freshly grated))
100 g pine nuts
250 ml olive oil
Pepper and sea salt

Preparation time: approx. 25 minutes

Wash, press out and cut the wild garlic.
Carefully dry-roast the pine nuts (ie without fat) in a pan.
Grate the Parmesan cheese.
Mix the wild garlic with the pine nuts and Parmesan cheese.
Finally, place the mixture in a liquidiser (or use a hand blender), add the olive oil, and blend Season the ready-made pesto with salt and pepper to taste.
