Stewed strawberries make for a fabulously refreshing summery dessert for virtually any occasion, and one that's quick and easy to prepare:
This is what you'll need (for 4 portions):
• 500 gr strawberries
• 50 gr sugar
• 1 organic lemon
First, prepare the strawberries, i.e. rinse well, remove the stalks and leave to drain, before cutting the strawberries into quarters. Then place the strawberries in a pan and mix with the sugar and 2 tsp of lemon juice. Allow to simmer for 5 minutes on a low heat. If preferred, squash the strawberries with the back of a spoon to produce a compôte. By the way, the aroma of the strawberries harmonises perfectly with a dash of black pepper. Finally, allow the stewed fruit/compôte to cool, then place in the fridge.
Serve the chilled stewed strawberries/compôte with warm vanilla sauce or vanilla ice-cream.
