FRENCH FRIES WITH A DIFFERENCE

Ever tried using pumpkin to make French fries?
Pumpkin fries are low in calories and absolutely delicious, provided of course that the right mix of spices is used.

This is what you’ll need:

    • 1 Hokkaido pumpkin
    • Chilli flakes
    • Paprika powder
    • Rosemary (ideally fresh, not dried)
    • Coarse sea-salt
    • Cold-pressed olive oil

First cut the pumpkin in half, remove the seeds and cut into thin slices.
Place the slices in a bowl with the spices and toss well to make sure the spices are evenly distributed.
Then line up the slices on a baking tray covered with grease-proof paper.
Bake the fries in the oven for approx. 15-20 minutes at 180° C (356° F) or gas mark 4, turning after roughly half the time.
