HONEYDEW MELON WITH SERRANO HAM

This dish is a Spanish tapa classic and perfect for warm summer evenings.

Ingredients for 6 servings

  • approx. 1 kg honeydew melon
  • Serrano ham in slices (15 pcs.)
  • 1 carrot, grated
  • 1 lemon
  • Olive oil
  • 1 shallot, finely diced
  • wine vinegar
  • salt & pepper

And this is how it‘s done:

Cut the melon in half and carefully remove the flesh from the rind. Cut the flesh into roughly same-sized cubes and set aside in a bowl. Mix 6 T olive oil, lemon juice and 1 t vinegar to make a marinade, adding salt & pepper to taste. Drizzle over the melon. Mix in the grated carrot and diced shallot. Place the salad in the fridge and allow to chill for approx. 2 hours. When ready to eat, tear the slices of ham into strips and add to the salad.
